Buckwheat Grits! Healthier than, and as creamy as, corn grits!

Buckwheat Grits:

1 cup of buckwheat grits (I use Bob’s Red Mill Organic Whole Grain Creamy Buckwheat Hot Cereal )
4.5 cups of water (I tend to use A LOT of water.)
4 tbsp of Olive Oil.
1/4 tsp of sea salt (optional)

Bring all ingredients to boil EXCEPT olive oil and  then simmer for 10 minutes while stirring. Stir in Olive Oil then let sit for another 10 minutes.

Yummy licious!

  1. i recently made buckwheat grits according to the bob’s red mill package (1 cup grits, 3 cups water) but i added the following…

2 teaspoons of sea salt (1 tsp to bring to boil, 1 tsp for flavor)
2 tablespoons sesame tahini (adds a nice amount of fat and creaminess)
2 tablespoons lemon juice (to mellow out the bitterness of the tahini)
    2 teaspoons onion powder
    1/2 – 1 teaspoon garlic powder
    1/4 teaspoon of mustard powder
1/2 teaspoon turmeric (for cheesy color)

all of that combined created something that tasted a lot like cheese grits from back in the day! and i didn’t add any nutritional yeast 🙂 (hooray!)
